Bill Ellis has operated Bill's Bar–B–Que Restaurant in Wilson for more than forty years. On the Friday morning following Floyd, his restaurant was filled with floodwaters to within six inches of the ceiling. With no flood insurance but a lot of gritty determination, Bill built his restaurant back to be better than ever. He was interviewed there in August 2002.

"We've got pictures, day by day, of everything that came out of the restaurant. We've even got pictures of the eels that was swimming around in the building. That's when I decided I ain't going in that water no more until it goes down."
